The term “brasserie” is French, and conjures up images of unpretentious dining, where fresh local ingredients and good atmosphere are qualities that make a mealtime something special. Just like the French country kitchen, we also prioritise these qualities. It has to be a friendly, relaxed experience to enjoy a good meal, and a good meal should consist of what is found in the soil and in the fields right now.
Therefore the food experience in Restaurationen’s brasserie in central Copenhagen is rarely exactly the same, because in addition to the existing menu, dishes are prepared for The Blackboard, a daily menu based on special ingredients produced in small batches by local farmers. The blackboard gives brasserie guests the opportunity to enjoy a unique taste experience, as it enables the chef to develop new, original dishes each season.
THE FRENCH COUNTRY KITCHEN MEETS THE MODERN DANISH KITCHEN
In the brasserie kitchen, Restaurationen’s owner and head chef Bo Jacobsen works with seasonal fresh Danish ingredients. Both he and his wife Lisbeth have gastronomic roots in both French and Danish food traditions. They are both passionate about Danish ingredients and Danish food traditions, and are constantly inspired to try new things – but always with their 40 years of culinary wisdom as the backdrop for modern Danish dishes.
The quality of the ingredients is given the highest priority when cooking in the brasserie in Copenhagen. Like the traditional French country kitchen, it is the ingredients that ultimately define the menu, which follow the seasons closely. The fresh ingredients go hand in hand with Restaurationen’s ambition of sustainability – nothing should go to waste.

We take pride in creating the right atmosphere in our brasserie. Since Restaurationen opened its door in Copenhagen K’s Møntergade Street in 1991, it has been our goal to create a cosy, intimate and relaxed atmosphere that enables the brasserie guests to enjoy their meal to the full. Therefore at Restaurationen, we also offer a Food after 21 concept, which enables our guests to finish off their evening in Copenhagen with an exquisite meal.
We have also included the wine bar R, where you can discover a wide selection of quality wines, which like the food, are bought to be enjoyed in small batches, before the wine list is updated with new, exciting wines.
