BO JACOBSEN HAS WORKED FOR 37 YEARS IN THE RESTAURANT INDUSTRY AND HAS DEDICATED HIS CAREER TO PRESERVING AND DEVELOPING DANISH FOOD CULTURE.
He initially started studying history at university, but soon realised that his greatest passion was gastronomy. He began studying the subject in 1978 and graduated in 1981 at Roy Hurtigkarl’s legendary Restaurant Gastronomique.
However, it was not exclusively French gastronomy that attracted Bo Jacobsen. Instead, it was the desire to combine French food traditions with his love of Danish cuisine that has driven him over the years. First in Kommandanten, which he opened with his wife Lisbeth in 1987, and since 1991 at Restaurationen. For over 20 years, Bo Jacobsen has been working here to perfect his craft, driven by his great love for the rich Danish food traditions.
For him, it is this desire that motivates his work. The desire to work seriously with the best Danish ingredients, the desire to be constantly inspired by the ingredients found in Danish nature, thus keeping Danish food culture contemporary and vibrant.
When Restaurationen celebrates its 25th anniversary next year, it doesn’t mean that Bo Jacobsen intends to just rest on his laurels. On the contrary, he will work harder than ever to develop his kitchen.
For Bo Jacobsen, only the best is good enough, and the love of good food is always in focus.
