We have both been working professionally in the restaurant business for more than 35 years and today we are the leading figures in the ”Modern Danish” kitchen. A kitchen that uses the rich Danish tradition, to evolve and drive our cooking forward.
We work with local produce and stick firmly to the Danish season. Rather wait 14 days, than serve artificially grown vegetables.
RestaurationenClassic craftsmanship is used in preparing our dishes and we refrain from using machines allsorts and technical aids. Our food is uncomplicated and unspoiled, with an emphasis on perfect preparation and intense taste. It is what is on the plate that counts, not unnecessary decorations or peculiarities which have no real function.
Our menu offers Danish speciallities in a modern execution and we change the menu with the season. Everything is home made in the most minute detail.
Our wine list is personal, broad and with vintage depth. We seek out small quantities of top wines and change the list often. We also offer wines by the glass, all mature and ready to drink.
After dinner we offer coffee, espresso, tea, homemade petits au fours, biscuits and lots of digestives.
Restaurationen is decorated in timeless Danish design. The restaurant is spacious with ample room between the tables. They are set with Royal Copenhagen, silver cutlery, Holmegaard glasses and Wegners “Y” chair.
The walls are adorned with contemporary Danish art by, among others: Peter Carlsen, Søren Ankarfeldt, Tony Hørning, Bendt Ulrik Sørensen and Claus Carstensen.
At Restaurationen the atmosphere is relaxed and informal. The service is professional without being intrusive and we do absolutely everything to give our guests the best possible evening. Food and wine must be perfect and are not the goal, but the means to give our guests the best experience.
